About the chef

Over the last ten years, Byung, the head chef and co-founder of Aji Sushi, has worked at the most exciting names in the London restaurant scene. It's hard to illustrate his cooking style with one because it has been shaped by many different experiences - not only from cooking but also from life. Byung started off his career as a designer but soon his love of food led him a secret double-life as a chef. He enjoys using seasonal British ingredients alongside Japanese flavours, which makes traditional Japanese dishes more creative and fresh.
